CONCH BURGERS

Here is a recipe for an island favorite.

2 1/2 lbs of Conch ground coarse
1 cup diced onions
2 eggs
1 tsp salt
1 tsp black pepper
4 - 6 drops of hot sauce
Beat eggs and then mix rest of ingredients into 5 oz. patties. Fry them the same as a hamburger patty. Serve on a hamburger roll with tarter sauce, lettuce and tomato. If you like, sprinkle on more hot sauce for a real island treat.

(Conch is pronounced "KONK". Many large seafood markets will carry frozen conch.)
Remember in the islands seasoning is “HOT - HOT - HOT”

(NOTE: Most large seafood stores will carry frozen conch)
